Ingredients
  • 2 (8-ounce) pieces of purchased or homemade pizza dough, recipe follows
  • 1/3 cup homemade or purchased marinara sauce
  • 1/3 cup (lightly packed) shredded smoked mozzarella cheese
  • 1 cup (lightly packed) shredded Fontina cheese
  • 2 ounces mushrooms, thinly sliced
  • 2 ounces pancetta, chopped
  • Pizza Dough:
  • 1/2 cup warm water (105 to 110 degrees F)
  • 2 teaspoons active dry yeast
  • 2 cups all-purpose flour, plus more for kneading
  • 1 teaspoon salt
  • 3 tablespoons olive oil, plus more for bowl
Directions

Position 1 oven rack in the center and the second rack on the bottom of the oven and preheat to 450 degrees F.  Roll out each piece of pizza dough into a 13 1/2 by 8 1/2-inch rectangle. Transfer to separate large baking sheets.

Spoon the marinara sauce over the pizzas, dividing equally and leaving a 1-inch border around each pizza. Sprinkle the mozzarella and Fontina cheeses over the pizzas, dividing equally. Sprinkle the mushrooms and pancetta over the cheese. Bake the pizzas until the crusts are crisp and brown on the bottom and the cheese is melted on top, about 15 minutes. Cut the pizzas crosswise into rectangular slices and serve immediately.

Pizza Dough:

Mix the warm water and yeast in a small bowl to blend. Let stand until the yeast dissolves, about 5 minutes. Mix the flour and salt in a food processor to blend. Blend in the oil. With the machine running, add the yeast mixture and blend just until the dough forms. Turn the dough out onto lightly floured surface and knead until smooth, about 1 minute. Transfer the dough to a large oiled bowl and turn the dough to coat with the oil. Cover the bowl with plastic wrap and set aside in a warm draft-free area until the dough doubles in volume, about 1 hour. Punch the down dough and form into ball. The dough can be used immediately or stored airtight in the refrigerator for 1 day.

Yield: 1 (16-ounce) ball of pizza dough

  • 1 small head cauliflower, chopped (about 5 cups)
  • 2 ounces shredded Asiago (1 cup)
  • 1 large egg
  • 1/2 teaspoon dried Italian seasoning or oregano
  • 1 clove garlic, minced
  • Kosher salt and freshly ground black pepper
  • Olive oil, for brushing
  • 1 1/2 cups shredded mozzarella (6 ounces)
  • 1/2 cup marinara sauce
  • 4 slices prosciutto (1 ounce), sliced into ribbons
  • Crushed red pepper flakes, for sprinkling
  • 1/4 cup fresh basil leaves, torn
Directions

Special equipment: A pizza stone or baking sheet; a pizza peel, flat cutting board or cookie sheet; and a clean kitchen towel.

Preheat a pizza stone or clean baking sheet in an oven to 475 degrees F.

Add the cauliflower to a food processor and pulse until finely ground and the consistency of couscous; you should have about 4 cups.

Transfer the cauliflower to a large bowl. Add the Asiago, egg, Italian seasoning, garlic, 1/2 teaspoon salt and a few turns of black pepper and combine until the mixture holds together when pinched. Pour onto a clean kitchen towel and wring out as much moisture as you can.

Line a pizza peel, flat cutting board or cookie sheet with parchment and brush with some oil. Spread the cauliflower mixture into a 12-inch circle. Slide the parchment onto the preheated pizza stone and bake until barely golden and darker at the edges, about 15 minutes.

Remove the crust from the oven, sprinkle with the mozzarella and spread the marinara over the top (this keeps the crust from becoming soggy and the cheese from sliding). Scatter the prosciutto across the top and sprinkle with a good pinch of crushed red pepper. Slide back onto the pizza stone and bake until bubbly with browned spots, about 4 minutes.

Sprinkle with the basil just before serving.

  • 2 tablespoons olive oil
  • 2 pounds Italian sausage
  • 1 pound ground beef
  • 12 ounces sliced pepperoni
  • 1 pound mushrooms, sliced
  • 3 cloves garlic, minced
  • 2 green bell peppers, diced
  • 2 red bell peppers, diced
  • 1 large onion, diced
  • One 28-ounce can whole tomatoes
  • One 15-ounce can tomato paste
  • 1/4 cup prepared pesto
  • 1/3 cup finely minced fresh parsley
  • 2 teaspoons salt
  • 1 teaspoon freshly ground black pepper
  • 1/2 teaspoon red pepper flakes
  • 1/2 cup sliced black olives
  • 30 ounces whole-milk ricotta
  • 2 eggs, beaten
  • 1/2 cup grated Parmesan, plus extra for sprinkling
  • 8 lasagna noodles, cooked until al dente
  • 24 ounces fresh mozzarella, cut into thin slices
Directions

Drizzle the olive oil into a large pot over medium-high heat. Add the sausage, ground beef and pepperoni and stir, breaking the meat up as it begins to cook. Continue cooking, stirring occasionally, until brown, and then remove the meat to a plate.

Add the mushrooms, garlic, bell peppers and onions to the pot and saute until the mushrooms have softened and the others have some color. Add the meat back in along with the tomatoes, tomato paste, pesto, half the parsley, 1 teaspoon of the salt, 1/2 teaspoon of the black pepper and the crushed red pepper flakes. Stir, reduce the heat to low and simmer for 25 to 30 minutes. Add the black olives and stir.

Preheat the oven to 350 degrees F.

To make the cheese mixture: Combine the ricotta and eggs in a large bowl. Add the Parmesan, the rest of the parsley and the remaining 1 teaspoon salt and 1/2 teaspoon pepper. Stir the mixture until totally combined.

To assemble the lasagna: Overlap 4 lasagna noodles in the bottom of a large rectangular baking dish. Spoon half the cheese mixture over the noodles and smooth it out into a flat layer. Lay half of the mozzarella slices on top followed by half of the meat sauce. Repeat these layers once more and top with some extra Parmesan. Bake until heated through and bubbly on the top, 40 to 45 minutes.

The lasagna can be made up to 2 days ahead of time and stored in the fridge, unbaked. It can also be frozen, unbaked. Just thaw before you're ready to bake it.

  • 2 pounds ground beef
  • 1 1/2 pounds (about 6 links) sweet Italian sausage
  • Granulated garlic, for seasoning
  • Salt and freshly ground black pepper
  • 1 1/2 pounds mozzarella, shredded
  • 1 1/2 pounds pepperoni, chopped
  • 1 pound provolone, chopped
  • 2 cups grated Parmesan
  • 1/4 cup fresh basil leaves, chopped
  • 4 cups chilled marinara sauce
  • 2 eggs
  • Flour, for dusting
  • 30 spring roll wrappers
  • Vegetable or canola oil, for frying
Directions

Special equipment: 3-ounce ice cream scoop; Pastry brush

Form the ground beef into eight 4-ounce hamburger rounds. Remove the casing from the sausage links and place the meat on a preheated flat top. Cook the hamburgers on the flat top as well, sprinkling with garlic and some salt and pepper. Chop the ground beef and sausage mixture and mix together on the flat top. When fully cooked, remove from the heat, place on a sheet pan and cool for 15 minutes.

In a large mixing bowl, combine the mozzarella, pepperoni, provolone, Parmesan and basil. Mix together evenly. Once the sausage mixture has cooled add to the cheese mixture. Add the marinara and mix everything together gently.

In a small bowl, beat the eggs. Fill a medium bowl halfway with flour. On a clean surface spread a handful of flour. Place 4 spring roll sheets on the table, with the corners at the top and bottom (forming a diamond shape). Using a 3-ounce ice cream scoop, place one scoop of filling in each spring roll wrapper and spread evenly, leaving a space on both ends. Dip a pastry brush in the egg mixture and dab the edges of the spring roll wrapper. Fold the bottom side up over the filling, then fold the left side in and the right in toward the center. Now that these three corners are folded in, brush egg wash on the top again and roll the whole wrap away from you toward the top corner of the wrapper, and make sure that is sealed. Repeat with the remaining rolls and filling.

Place the completed rolls in a pan sprinkled with flour. Layer with parchment paper or plastic wrap to prevent the rolls from sticking together.

Fill a deep fryer with vegetable oil and heat until a deep-frying thermometer inserted in the oil reaches 350 degrees F. Carefully place the pizza rolls in the fry basket and fry until golden brown, about 5 minutes.

Preheat oven to 350 degrees F. Grease a 15-inch pizza pan.

Prepare brownie mix according to directions on box. Pour onto prepared pan. Bake for 20 minutes or until done. Remove from oven and cool.

Beat cream cheese while adding pineapple and sugar together in a bowl. Spread mixture over brownie crust. Arrange banana, strawberry slices, marshmallows, and cherries over cream cheese mixture. Sprinkle with nuts and coconut. Drizzle with chocolate syrup. Add whipped cream on top and mint for garnish. To serve, slice as you would a pizza and enjoy!

  • 5 ounces Canadian bacon slices, halved
  • 8 ounces canned pineapple chunks
  • Greek Salad Pizzas:
  • 5 tablespoons olive oil
  • Salt and freshly ground black pepper
  • One 12-ounce jar kalamata olives, chopped
  • 8 ounces crumbled feta
  • 4 ripe tomatoes, diced rough
  • 1/2 English cucumber, seeded and diced
  • 1/2 bunch fresh parsley, chopped
  • Pepperoni and Jalapeno Pizzas:
  • 1 cup sliced pepperoni
  • 6 to 7 jalapenos, sliced
  • Tomato Basil Pizzas:
  • Sliced Roma tomatoes, for topping
  • 2 tablespoons olive oil
  • Salt and freshly ground black pepper
  • 1/2 bunch fresh basil
  • Hamburger Pizzas:
  • Olive oil, for sauteeing beef
  • 1 pound ground beef
  • 1 teaspoon red pepper flakes
  • Salt and freshly ground black pepper
  • Hamburger Taco Pizzas:
  • 8 ounces grated Cheddar
  • 1 pound browned ground beef
  • Chopped romaine lettuce, for topping
  • Diced tomatoes, for topping
Directions

For the pizza base: Preheat the oven to 375 degrees F.

Lay the rolls cut-side up on a large baking sheet. Top each half with marinara sauce (or pesto for the tomato basil pizzas), followed by the mozzarella. Then add your toppings of choice. See below for directions for assembling specific pizzas.

Once the pizzas are assembled, put the baking sheet on the lowest rack for 8 to 10 minutes. Then turn up the heat to 425 degrees F and put the sheet on the highest rack until the cheese starts to bubble a bit and turns golden. Remove and serve immediately! Cut the pizzas in half right across the middle so there are mini French bread pizzas for everyone.

Pizza Varieties:

For the Canadian bacon and pineapple pizzas: Top with the Canadian bacon slices and pineapple and bake according to the directions above.

For the Greek salad pizzas: Leave off the sauce and brush the sliced rolls with 2 tablespoons of the olive oil; sprinkle with salt and pepper. Top with the mozzarella and bake according to the directions above.

While the pizzas are baking, toss together the olives, feta, tomatoes, cucumbers, parsley, the remaining 3 tablespoons olive oil and salt and pepper to taste in a medium bowl. Top the cooked pizzas with the chopped Greek salad.

For the pepperoni and jalapeno pizzas: Top with the pepperoni and jalapeno slices and bake according to the directions above.

For the tomato basil pizzas: Use pesto instead of the marinara sauce, and top with the tomato slices. Drizzle with the olive oil and sprinkle with salt and pepper. Bake according to the directions above. Top the cooked pizzas with the basil leaves.

For the hamburger pizzas: Heat the olive oil in a skillet over medium-high heat. Add the ground beef, red pepper flakes and salt and pepper and saute until the beef is no longer pink. Top the rolls with the sauteed ground beef and bake according to the directions above.

For the hamburger taco pizzas: Top with the Cheddar and ground beef and bake according to the directions above. Top the cooked pizzas with the chopped lettuce and tomatoes.

Ingredients
  • 1 package active dry yeast
  • 2 1/4 cups of flour
  • 2 tablespoons olive oil
  • 1/4 cup cornmeal
  • 3/4 cup warm water (110 - 115 degrees)
  • 1 teaspoons salt
  • Pinch of sugar
Directions

In a small glass bowl, combine yeast, warm water and sugar. Let stand for 8 to 10 minutes or until it is bubbly. Meanwhile in the bowl of a food processor, using the cutting blade, combine together the salt, 2 cups flour and cornmeal. Stir the bubbling yeast mixture. With the food processor running slowly add the yeast and the olive oil. Process until well combined and a ball forms, about 1 2 minutes. Using the remaining 1/4 cup of flour lightly dust a flat surface, knead the dough for about 2 minutes. Place dough into a lightly oiled bowl and cover with a damp towel. Let dough sit for approximately one hour and fifteen minutes or until it has doubled in size
