Ingredients
  • 1/4 cup light red or white wine, Fiano di Avellino
  • 3/4 cup warm water
  • 1 1/2 ounces fresh yeast
  • 1 tablespoon honey
  • 1 teaspoon salt
  • 1 tablespoon plus 1 tablespoon olive oil
  • 3 1/2 cups flour
Directions

Place wine, water and yeast in a large bowl and stir until dissolved. Add the honey, salt and 1 tablespoon olive oil and mix well to combine. Add 1 cup of the flour and mix with a wooden spoon until it becomes a loose batter. Add 2 more cups of the flour and stir for 2 to 3 minutes, incorporating as much flour as you can with the wooden spoon.

Bring the dough together by hand and turn out onto a floured board or marble surface. Knead for 6 to 8 minutes, until dough is smooth and firm. Place in a clean, lightly-oiled bowl, using remaining tablespoon of oil and cover with a towel. Let rise in the warmest part of the kitchen for 45 minutes.

For individual pizzas or calzones, cut the dough into 4 equal pieces and knead into rounds. For one large pizza, knead into 1 large round. For either, let rest for 15 minutes.

  • 1 store bought pizza dough - or pick one up from your favorite pizzeria
  • Extra- virgin olive oil, for drizzling
  • 2 cups whole or part skim ricotta
  • 2 cloves garlic, finely chopped
  • Handful flat-leaf parsley, finely chopped
  • 2 cups shredded mozzarella or provolone, 1 pouch
  • 10 fresh basil leaves, 1/2 cup, shredded
Directions

Preheat a pizza stone if you use one along with the oven to 425 degrees F.

Stretch dough to form a pie and transfer to stone or pizza baking tray. Pierce the dough with the tines of a fork in several places. Drizzle extra-virgin olive oil around the crust. Mix the ricotta cheese with garlic and parsley and season it with salt and black pepper. Spread the ricotta across the dough. Top the pizza with mozzarella or provolone. Bake until crispy, 20 minutes. Top the white pizza pie with the shredded basil leaves, cut and serve.

Roll the pizza dough into a small disk on a lightly-floured surface; let it rest 10 minutes, then toss, stretch or roll it into a thin, broad crust.

Prepare a grill for high heat. Brush the pizza dough with some of the oil and place it on the grill. Grill, covered, for 30 seconds, then check: The crust should be slightly stiff but not deeply browned. Flip the crust, top it with a thin layer of the tomato sauce and the mozzarella. Sprinkle with some basil leaves, cover and grill until the cheese has melted and the crust has browned, about 30 seconds more.

Place a pizza stone in the oven. Preheat the oven to 500 degrees F, allowing the stone to get hot.

Roll out the pizza dough on a floured surface into approximately an 8 to 10-inch round and 1/4-inch thick. Ladle the sauce onto the dough and spread it over top, leaving about a 1-inch border around the edge. Top with the tomatoes, oregano, some basil leaves and mozzarella rounds.

Carefully remove the pizza stone from the oven, and dust with the cornmeal. Place the pizza on top of the stone and pop the whole thing in the oven. Bake until crust is golden and the cheese has melted, about 10 minutes.

Cut into wedges and serve immediately.

Basic Tomato Sauce:

Heat the oil in a pot over medium heat. Add the onion and garlic and cook for about 5 to 7 minutes, until onions are soft and translucent. Season with salt and pepper, to taste, and add the basil leaves, red wine, and tomatoes. Bring to a boil, then simmer for about 20 to 25 minutes.

Cool the sauce before using it to make pizza.

The Problem

I recently ran into the issue of “GPS Provider Disabled” when using Apache Cordova on Android. After reading many threads, the fix seemed to always be to set the permissions in config.xml with the following code:

1."org.apache.cordova.geolocation" />

After doing that, you would need to check Settings –> Location and make sure it is on.

If it didn’t work after that, well you were pretty much on your own…

The Resolution

After digging I found that if I include enableHighAccuracy to false, then it would use Assisted GPS rather than satellite positioning. Sure, the results may not be as high as you would like but it is better than an ugly dialog box saying “GPS Provider Disabled”.
