Ingredients
  • 2 large all-purpose potatoes (about 14 ounces)
  • 1/3 cup warm water (110 degrees F)
  • 2 teaspoons agave syrup or honey
  • One 1/4-ounce package active dry yeast
  • 1 cup white rice flour
  • 1/2 cup tapioca starch
  • Kosher salt
  • 1 large egg white
  • 1 tablespoon extra-virgin olive oil

Cover the potatoes with water in a medium pot. Bring to a boil and cook until fork-tender, about 25 minutes; remove. Once the potatoes are cool enough to handle, remove the skin and work the potatoes through a ricer set over a large bowl (should have about 2 cups). Set aside.

Stir together the warm water, agave and yeast in a measuring cup or small bowl. Let sit until a small layer of foam develops at the top, 3 to 5 minutes. (If this doesn't happen, discard and try again with new yeast.)

Add the potatoes, rice flour, tapioca starch and 3/4 teaspoon salt to the bowl of a stand mixer fitted with the paddle attachment. Mix on medium speed until the mixture is combined and forms a fine, crumbly meal. Continuing to mix on medium, add the egg white and oil, slowly drizzle in the yeast mixture and mix until the dough comes together (it will be slightly tacky). Cover the bowl tightly with plastic wrap and set in a warm place until the dough increases by half, about 1 1/2 hours.

Form the dough into two or four balls, for small or medium pizzas, then either cook them as desired or wrap them well and freeze for up to 1 month. Thaw frozen dough at room temperature, then shape and cook.

Keep parbaked pizza shells on hand for quick weeknight meals. Roll the dough balls into rounds and bake on a preheated pizza stone or baking sheet at 500 degrees F for about 10 minutes for a softer crust, about 15 minutes for a crisper crust. Remove and let cool. Wrap the pizza shells well and freeze for up to 1 month. When ready to serve, add your favorite toppings to the frozen pizza shell and bake on a preheated pizza stone or baking sheet at 500 degrees F until hot.

  • 1 storebought pizza dough
  • 2 tablespoons butter, melted
  • 4 tablespoons Cinnamon-Sugar, divided, recipe follows
  • 2 cups mascarpone cheese
  • 1 tablespoon heavy cream
  • 2 tablespoons lemon juice
  • 1 teaspoon lemon zest (from 1 lemon)
  • 2 cups mixed berries
  • Cinnamon-Sugar:
  • 1 vanilla bean
  • 1/2 cup sugar
  • 1 tablespoon ground cinnamon
Directions

Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper.

Using a rolling pin, roll out the pizza dough to a thickness of about 1/4 inch. Transfer the pizza dough to the lined baking sheet and brush the dough with the melted butter. Sprinkle with 2 tablespoons Cinnamon-Sugar and bake until golden brown, about 10 to 15 minutes. Cool the pizza crust on a wire rack.

Meanwhile, in a medium bowl, mix together the cheese, cream, lemon juice, and zest.

Spread the cheese mixture over the cooled crust. Top with mixed berries and sprinkle with the remaining Cinnamon-Sugar. Slice like a pizza and serve.

Cinnamon-Sugar:

Cut the vanilla bean in half, lengthwise. Using the back of a knife, scrape along the inside of the vanilla bean to collect the seeds. Scrape vanilla bean seeds into a small bowl. Add sugar and cinnamon and stir to combine. Set aside in a small serving bowl.

Place a pizza stone in the oven. Preheat the oven to 500 degrees F, allowing the stone to get hot.

Roll out the pizza dough on a floured surface into approximately an 8 to 10-inch round and 1/4-inch thick. Ladle the sauce onto the dough and spread it over top, leaving about a 1-inch border around the edge. Top with the tomatoes, oregano, some basil leaves and mozzarella rounds.

Carefully remove the pizza stone from the oven, and dust with the cornmeal. Place the pizza on top of the stone and pop the whole thing in the oven. Bake until crust is golden and the cheese has melted, about 10 minutes.

Cut into wedges and serve immediately.

Basic Tomato Sauce:

Heat the oil in a pot over medium heat. Add the onion and garlic and cook for about 5 to 7 minutes, until onions are soft and translucent. Season with salt and pepper, to taste, and add the basil leaves, red wine, and tomatoes. Bring to a boil, then simmer for about 20 to 25 minutes.

Cool the sauce before using it to make pizza.

Yield: about 3 cups

  • 1 tablespoon olive oil
  • 8 ounces Italian turkey sausage
  • 1 cup tightly-packed arugula (about 1 ounce)
  • 4 ounces cream cheese, room temperature
  • 1/3 cup grated Parmesan, plus 1/4 cup
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 (13.5-ounce) package of store-bought pizza crust (recommended: Pillsbury)
  • All-purpose flour, for rolling out pizza dough
  • 1 egg, beaten (for egg wash)
  • 1 1/2 cups marinara sauce, store-bought or homemade
Directions

Heat the olive oil over medium-high heat in a medium-sized, heavy skillet. Add the sausage and cook until crumbled and golden, about 5 minutes. Add the arugula and cook until wilted. Turn off the heat and let cool about 10 minutes. Add the cream cheese, 1/3 cup Parmesan, salt, and pepper and stir to combine. Set aside.

Preheat the oven to 400 degrees F. Roll out the pizza dough on a lightly floured surface to a thin 20 by 12-inch rectangle. Cut the rectangle in half lengthwise. The cut each half into 8 equal rectangles.

Spoon topping onto 1 side of each of the rectangles. Using a pastry brush, brush the edges of the rectangle with egg wash. Close the rectangle of pizza dough over the topping. Use a fork to seal and crimp the edges. Place the pizza pockets onto a parchment paper-lined baking sheet. Brush the top of each pizza pocket with egg wash. Sprinkle with the remaining Parmesan. Bake until golden, about 15 to 17 minutes.

Meanwhile, heat the marinara sauce over low heat in a medium saucepan. Serve the hot pizza pockets with the marinara sauce alongside for dipping.

  • 1 pound cream cheese, softened

  • 1 teaspoon dried oregano
  • 6 ounces tomato sauce
  • 4 ounces pepperoni, sliced thin
  • Pitas, cut in to points, lightly toasted
Directions

Pulse the heck out of everything except the tomato sauce, pepperoni and pita, scraping the bowl to ensure even mixing. Shape this mass as you'd like. Make some wells on top. Put the tomato sauce in the wells. Shingle the pepperoni around the exterior. Serve with pita points.

Ingredients
  • 1/4 cup warm water, 105 degrees F
  • 1/2 envelope dry yeast (1 1/8 teaspoons)
  • 1/2 cup room temperature water
  • 3 tablespoons extra-virgin olive oil, plus more for oiling the bowl
  • 2 cups all-purpose flour
  • 1 1/2 teaspoons kosher salt, plus more for topping
Directions

Preheat oven to 350 degrees F.

Add the warm water into a small mixing bowl or a standard 2 cup measure, sprinkle the yeast over the warm water and let stand until the yeast softens, 3 to 5 minutes. Mix slightly to dissolve yeast and allow it to proof for another 15 minutes in a warm spot in the kitchen. Add the room temperature water and 1 tablespoon of the olive oil to the yeast mixture and stir to combine. Measure the flour and the salt into the bowl of a stand mixer. Combine on very low speed with the paddle attachment. Slowly add the liquid ingredients to the dry, and increase the speed of the mixer slightly to incorporate the mass. Stop the mixer and replace the paddle with a dough hook if you have one. Knead until the dough becomes smooth and begins to pull away from the sides of the bowl, about 4 minutes. Place the dough on a floured board and knead the dough by hand for another 1 to 2 minutes. Add flour to dust as needed to prevent sticking. Shape the dough into a ball and place in a very lightly oiled bowl and cover with a clean towel, let stand until dough doubles in size, about 1 hour.

When the dough has doubled in bulk, divide it into 6 equal pieces (about 6 ounces each). Set the pieces of dough being used on a sheet pan and cover with a clean towel or plastic wrap. (Dough not being used can be placed in the refrigerator or frozen until ready to use.) With a rolling pin on a lightly floured surface, roll each piece of dough as evenly as possible into a 10-inch circle, dusting lightly with flour, as necessary.

Cover with toppings and bake until golden brown, about 10 minutes

  • 3 tablespoon extra-virgin olive oil, plus more for brushing
  • Kosher salt
  • 2 pounds store-bought pizza dough, at room temperature
  • 2/3 cup pizza sauce, plus more for dipping
  • 24 pepperoni slices, quartered
  • 1 cup shredded mozzarella (4 ounces)
  • 1/4 cup grated Parmesan (1 ounce), plus more for sprinkling
Directions

Position an oven rack in the center of the oven, and preheat to 400 degrees F. Brush the bottom and sides of a 9-by-5-inch loaf pan with oil.

Pour the 3 tablespoons oil onto a large dinner plate, and sprinkle with 1/2 teaspoon salt. Pinch off pieces of dough the size of Ping-Pong balls, and roll them into rough balls. Roll each dough ball around in the salted oil until all sides are coated.

Put half the balls in the prepared pan, squishing them together. Spread half the sauce over the balls, then sprinkle with half the pepperoni, mozzarella and Parmesan. Repeat with the remaining dough balls, sauce, pepperoni and cheeses.

Put the loaf pan on a rimmed baking sheet (to catch any drips), and bake until the bread is puffed up and golden brown, about 25 minutes. Cover loosely with foil, and continue to bake until the bread is cooked through in the middle, about 25 minutes. Let it rest in the pan for 10 minutes, then use dry oven mitts or kitchen towels to carefully unmold. Sprinkle generously with Parmesan, and serve hot. (Let your guests pull the bread apart!)
